Chicken Biryani

This is an easy recipe that you can cook in one large pot. All the flavors meld together nicely for a tasty dinner the whole family can enjoy.

Makes 4 servings.

1 1/2 teaspoon garam masala

3/4 teaspoon cumin1/2 teaspoon salt

1 lb chicken, cubed or 1/2 lb chicken and 1/2 pond shrimp1 med onion chopped

1 jalapeno diced

2 cloves garlic minced

1 teaspoon ginger minced

2 cups chopped tomatoes

1/3 cup golden raisins

1 cup uncooked basmati or jasmine ric

14 oz. can chicken broth

1/4 cup chopped fresh cilantro

1/4 sliced almonds

4 lime wedges

Lightly season chicken with salt and cook over medium heat for 3 min. Add in spices, onion, and jalapeno and sauté 3 min. Add in garlic, ginger, tomatoes, raisins, broth. Bring to a boil then add the rice. Then immediately reduce heat to low; cover and cook for 15-20 min. Note if using shrimp add in during final 3 min of cook time during the last 3 min of cooking.
